Diet Cola Barbecue Chicken

Ingredients

4 boneless, skinless chicken breasts
1 cup catsup - use the low carb kind
12 oz. can diet cola (best if you use diet rite!)

Put chicken in nonstick skillet. I usually brown my chicken a little first before pouring the catsup and diet cola over the top. Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue cooking until the sauce becomes thick and adheres to the chicken. It turns into the most incredible BBQ sauce.

I keep forgetting to put the low carb ketchup on my grocery list . . . I don't normally use ketchup. The recipe is from a low carb board that I check regularly, and the people there say it is fabulous. Next time I go to the store, I will get the ketchup for sure.

The low carb catsup is good. Can't tell the difference between it and the original catsup.

This was a super easy dinner. I browned several chicken breasts in a nonstick skillet, then I poured 12 ounces of Diet Rite cola and 1 cup of the Heinz low carb ketchup on top. I stirred it all up, heated it to a boil, lowered the heat and covered it. I had to take my son to taekwondo, and when we came back, I took off the lid and boiled the sauce to thicken it. The chicken was very tender, and the sauce was good. I think next time I will add a few spices to it as it was a very mild sauce. But it was so easy that it certainly bears repeating.
